Tracking my food in my My Fitness Pal app really helps me stay on track too. I track what I'm eating & drinking and can assess what I can eat later in the day. This app can adjust your calories based on if you work out as well. This has been a huge help for me!
Let me start by saying, I am not a big breakfast food person. I love eating in the morning, but I'm not a big fan of waffles, pancakes, or eggs. I have to be in the mood for them. So normally, I was eating your regular foods- but mainly tomato salad. Yup, I would eat just about daily a tomato salad usually with tomatoes (duh), olives, cucumber, beans, avocado & oil. Lots and lots of olive oil so that my bread that I had could soak up all the juices.
It's obviously not the worst thing in the world but it's certainly not the best.
So, I've recently decided, I couldn't eat that every morning as well as a full lunch & snacks. That just wasn't going to work anymore. I've been figuring out what fills me up in the morning that I actually enjoy eating. So here are my new favorite breakfast foods that are perfect for work & a peak into what I eat throughout a normal day:
-Steel cut oatmeal- made with a little bit of vanilla & cinnamon. I love to add a touch of peanut butter & banana OR blueberries, strawberries and a smidgen of pure maple syrup.
-English muffins seem so obvious for a breakfast on the go & I've recently become obsessed with the Vermont Country brand. They're so hearty & delicious! I'll skip the butter and instead will add a tablespoon of peanut butter or half an avocado depending on my mood.
-Smoothie- when I have some extra time in the mornings, I'll make a smoothie! I add a little bit of water, kale or fresh spinach leafs, a scoop of protein powder (I use the brand Tera's Whey), and some frozen fruit. If I see frozen fruit on sale, I'll buy it. Otherwise, I'll use our food saver & make some single serve pouches with fruit and freeze them. I also throw in about a teaspoon or so of chia seeds- this doesn't alter the taste, but it makes my smoothies nice & thick. This gets them to an ice cream consistency and it's amazing.
- I love a soup & a salad combo. We always are making soups at home especially an easy veggie soup, lentil soup or a potato, leek & broccoli soup. My favorite thing about salads is how they can be customized every day. I'll throw in cherry tomatoes, olives, beans, corn, avocado, mushrooms & so many other things sometimes to add flavors & colors. However, I refuse to add fruits or nuts to my salad, for whatever reason, it freaks me out!
-Tuna with avocado. That's right, I completely skip the mayo- honestly mayo freaks me out. Instead, I take a half of a ripe avocado, mash it up & mix it into my tuna. I also add all sorts of things to my tuna, which might be weird. But I love adding a little bit of onion, celery, olives, pickles & tomatoes. Sometimes I add it all too! I only make this every so often, but when I do, I love it!
-Beans & Rice is a go to for me especially since I don't eat meat. It gives me some protein & keeps me full. I either make rice a head of time, or I've been really into the pouches of rice you can get at the grocery store. I'll use a third or a half of the pack & mix it with beans. I typically go for red kidney beans or black beans.
This is where I tend to eat most of my calories & will indulge a little bit more than I do throughout the day.
- I love veggie burgers, they're one of my all time favorite things to eat! I'll add a slice of cheese to my burger, skip the bun & have 2 sides. It all depends on my mood- I love the majority of vegetables, and often I'll end up sautéing some spinach or making some brussel sprouts with my burger. I'll have a small salad or a baked potato with it!
-Pasta, pasta, pasta. I love pasta & just because I'm watching what I eat, doesn't mean I won't ever eat this! What I am watching 95% of the time is my portion control. Let's be honest, I could straight up eat pretty close to an entire pound of pasta if I put my mind to it. So I watch how much I'm eating & I'll add a vegetable into my bowl. I love broccoli with pasta, or mixed vegetables sometimes. And, if I'm still hungry after, I'll eat a salad or a veggie to fill me up!
-I also love to make things like stuffed peppers, zoodles, shrimp tacos, salmon & more!
I'm a snacker throughout the day but looking back, I wasn't picking the smartest snacks. Now I focus on having a snack in between each meal to keep me fueled up to get through each day.
For me, I've been having a piece of fruit mid morning- banana, strawberries or apples are my go to. In the afternoon after lunch, I'll snack on carrots, peppers, celery, cucumber & cherry tomatoes. I'll mix it up between these. Or I'll have a handful of mixed nuts which always fills me up! When I want something a little different, I go for skinny pop (which I can eat an obscene amount of!) or veggie sticks.
Oh, and don't forget about my Nutella!! I will never give up on Nutella, however when I'm snacking with it, instead of having numerous tablespoons of it at a time, I've been limiting myself. I only need a little bit o make my day!
